Clean, roast, and grind the hazelnuts in a blender with sugar (the result should resemble a coarse cornmeal texture).
- Hazelnut: 340 g
- Sugar: 0.8 glass

Mix nuts and milk in a pot and bring to a boil over medium heat. Once the mixture reaches a boil, cover with a lid and let it simmer on low heat for 20-30 minutes.
- Hazelnut: 340 g
- Milk: 4.5 glasss

A few minutes before turning off the milk with nuts, mix the nut liqueur with cornstarch to make a kind of suspension. Strain the milk and discard the nuts.
- Nut liqueur: 3 tablespoons
- Cornstarch: 3 tablespoons

Return the milk to the pot and add the starch suspension. Cook over medium heat for 2 minutes, stirring constantly. The mixture will be thick. Remove from heat and mix in grated chocolate.
- Milk: 4.5 glasss
- Cornstarch: 3 tablespoons
- Dark chocolate 70%: 100 g

Place in the refrigerator overnight or at least for 4-6 hours, then put the base in your ice cream machine to make ice cream.
