In a deep bowl, beat both types of pre-chilled cream, gradually adding half of the powdered sugar until a fluffy thick cream forms. Add the liqueur and vanilla extract, mixing until smooth. Separately, beat room temperature egg whites with a pinch of salt until lightly frothy on low mixer speed. Then gradually add the remaining powdered sugar while continuing to beat at a higher speed until a thick meringue consistency is achieved. Gently fold the whipped egg whites into the whipped cream using a spatula from top to bottom. Place the resulting uniform cream in the refrigerator for a couple of hours.
- Cream 38%: 250 ml
- Cream 10%: 375 ml
- Powdered sugar: 100 g
- Vanilla extract: 1 teaspoon
- Amaretto liqueur: 80 ml
- Salt: 0.3 teaspoon
- Egg white: 2 pieces

Take the cream out of the fridge, mix it, pour it into the ice cream maker, and churn according to the instructions for 20-40 minutes. In the last minute of churning, add crushed amaretto cookies. At the end of churning, the mixture will resemble slightly melted soft ice cream. Fill a container with this mixture and place it in the freezer for 3-4 hours to set.

If there is no freezer, immediately pour the frozen mixture into a container, add cookies, mix and place in the freezer. Take out the container and stir the contents every half hour until fully frozen.
