Peel the apples and cut them into 1.5x1.5 cm cubes.

Separate the egg white from the yolk. Whip the egg white, add sugar and baking soda. Whip the yolk separately and pour it into the egg white.

Sift the flour and add it to the eggs, along with the baking powder, vanilla sugar, and apples. Mix everything together.

Add cinnamon to taste and mix well. Pour the mixture into a mold.

Place the mold in an oven preheated to 180 degrees, bake until golden brown. After turning off the oven, you can leave the charlotte there for 20-30 minutes.
