Apple pie with semolina

Apple pie with semolina is a cozy treat of Russian cuisine, infused with home warmth and the aroma of baked apples. This recipe recalls ancient village traditions when housewives used simple ingredients to create incredibly delicious pastries. Semolina gives the pie a delicate, airy structure, while apples fill it with juiciness and natural sweetness. Layers of flour, sugar, and semolina alternate with fragrant apple filling, creating a unique texture. The finishing touch is grated frozen butter that adds a crispy crust. This pie pairs perfectly with a cup of hot tea or freshly brewed coffee, making any tea time especially cozy. We mix flour, sugar, semolina, and baking soda.
- Wheat flour: 1 glass
- Sugar: 1 glass
- Semolina: 1 glass
- Soda: 1 teaspoon

We wash, peel, and grate the apples on a fine grater.
- Apple: 1.5 kg

Grease the deep pan with oil.
- Butter: 50 g

And now the most interesting part begins! We layer the obtained mixtures: 1st layer - dry mixture, 2nd layer - grated apples, etc. (I have about 3 apple layers and, accordingly, 4 layers of dry ingredients), the last layer should be made of flour, sugar, and semolina!
- Wheat flour: 1 glass
- Sugar: 1 glass
- Semolina: 1 glass

We level everything and rub with frozen(!) butter on top (I sometimes use Pyshechka baking margarine).
- Butter: 50 g

Place in the oven for about 1 hour at 150–200 degrees.

We check the readiness with a toothpick; the pie should not be wet!

We take it out, flip it onto a plate, and wait for it to cool completely.
