In a large bowl, whisk the yolks with a whisk or mixer until they lighten. Slowly add the sugar. Whisk everything well.
- Egg yolk: 4 pieces
- Sugar: 100 g

Mix milk, cloves, and cinnamon in a heavy-bottomed pot. Slowly heat over medium heat until the mixture is hot but not boiling.
- Milk: 400 ml
- Carnation: 2 pieces
- Cinnamon: pinch

Mix milk with eggs. Cook the mixture over medium heat without allowing it to boil. Remove from heat and add cream.
- Milk: 400 ml
- Egg yolk: 4 pieces
- Cream 35%: 200 ml

Strain through a sieve to remove the cloves. Let it cool.

Add vanilla extract, nutmeg, and alcohol (you can simply omit it for children).
- Vanilla extract: 1 teaspoon
- Nutmeg: 1 teaspoon
- Bourbon: 1 tablespoon

Optional: beat the egg whites to soft peaks. Whip with a teaspoon of sugar to stiff peaks and add to the eggnog.
