Orange peel jam is a delicate and aromatic treat from Italian cuisine, where the art of using every ingredient is revered. Wash the oranges thoroughly and pour boiling water over them to remove the layer of preservatives from the surface. Cut them lengthwise into 4 parts, then halve each part. Remove the pulp, then cut each peel slice in half again, resulting in fairly thin strips.

Place the peels in a deep bowl and completely cover with water. Soak for 3 days, regularly changing the water (about 4-5 times a day).

Then, remove the albedo (the white part on the inside of the peel) from each strip with a knife. Roll each strip into a spiral and thread it onto a string like beads. If the orange has a thin skin, you can skip removing the albedo. In this case, roll the spirals before soaking and pour water over the finished beads.

After soaking, boil the zest 3-4 times for 15-20 minutes, pouring out the water each time. After each boiling, rinse the zest beads with cold water.
- Water: 300 ml

In a large pot, boil a syrup of water and sugar, add the prepared beads, bring to a boil, and simmer for 20-30 minutes, then turn off and let cool.
- Water: 300 ml
- Sugar: 300 g

Repeat the process again, but add lemon juice after boiling.
- Lemon juice: 50 ml

After the jam cools down, remove the beads and take out the threads. Pour into a 300 ml jar and store in the refrigerator.
