Watermelon sorbet is a refreshing treat from sunny Italy. Light and fruity with hints of honey and citrus freshness, it’s perfect for a hot day. Sweet syrup made from honey and sugar deepens the flavor, while fresh watermelon cubes add structure. For the sorbet, you will need red sugar watermelon. Chop part of it (about 400 grams) in a blender and mix it with warm syrup made of honey, sugar, and water.
- Watermelon: 1 piece
- Honey: 20 g
- Sugar: 60 g
- Water: 100 ml

We pour in a spoon of lemon juice, port wine, and wine.
- Lemon juice: 1 tablespoon
- Port: 20 ml
- Dry white wine: 60 ml

Before pouring the sorbet into the molds and freezing, place a cube of watermelon at the bottom of each.

After the first hour of freezing, gently stir with a fork and freeze until a 'frozen' consistency.
