Pour the flour into a mound, place cold butter on top, and chop everything with a knife into crumbs, adding salt. Gradually pour in cold water while continuing to chop, forming a uniform ball of dough. Act quickly to prevent the butter from melting too much from the heat of your hands. Wrap the dough in plastic and refrigerate for 1 hour.

Peel and core two apples, then cut them into small cubes. Pour 2 tablespoons of water into the bottom of a thick-bottomed pot, add the apples, sprinkle with a tablespoon of sugar, and cook the jam over low heat. This will take about 30 minutes.

Peel the remaining apples, remove the core, and cut them first into halves, then into quarters, and finally into thin slices.
