Chocolate rolls with apples and oranges are an exquisite dessert embodying a harmony of flavors. Their base consists of tender chocolate pancakes soaked in butter, providing a rich, slightly bitter cocoa note. Inside are airy mascarpone, juicy apples, and refreshing orange that create a contrast of textures and tastes. This dessert recalls the European tradition of pairing chocolate with fruits, referencing French and Italian pastry artistry. Chilled and neatly sliced rolls take on an elegant roll shape, making them perfect for festive tables and refined treats. The final touch is melted dark chocolate that adds intense flavor and completeness to the composition. The wonderful combination of sweetness, freshness, and creamy tenderness makes these rolls not just a dessert but a true gastronomic delight.

1
Prepare pancake batter from eggs, milk, flour, sugar, and cocoa powder. It should be dark brown, so the amount of cocoa can be slightly increased (or decreased, 'to taste').
- Chicken egg: 1 piece
- Baked milk: 200 ml
- Wheat flour: 0.5 glass
- Cocoa powder: 2 tablespoons
- Sugar: 2 tablespoons
2
Fry thin pancakes in a well-heated pan. Fry each pancake on both sides and brush with butter.
- Butter: 30 g
3
Prepare the filling. Peel the orange and divide it into segments. Remove the pulp from each segment and cut it into small pieces. Try to leave no membranes. Peel half of the apple from the skin and seeds, first slicing it into thin segments, then cutting the segments into thin sticks.
- Oranges: 1 piece
- Apple: 0.5 piece
4
Place the pancake on the work surface, spread well with mascarpone cheese (or cream cheese mixture), and top with some apple strips and pieces of orange.
- Mascarpone cheese: 250 g
5
Roll the pancake into a roll, pressing slightly on all sides. Do the same with the other pancakes.
6
Place the prepared rolls in the refrigerator for 1.5–2 hours (or in the freezer for 20–30 minutes).
7
Then take out the pancakes, carefully trim the uneven edges, and cut the rolls into small portion-sized pieces (like sushi rolls).
8
Serve on portion plates. Melt the chocolate in a water bath and drizzle it over the prepared rolls.
- Dark chocolate: 50 g
