Grate the orange zest. In a bowl, mix the cottage cheese, sugar, zest, vanilla sugar, and add brown sugar. Optionally, you can add a teaspoon of grated ginger.
- Orange zest: to taste
- Soft cottage cheese: 250 g
- Vanilla sugar: 1 tablespoon
- Cane sugar: 3 tablespoons

In another bowl, beat the egg and egg yolk, and add to the other ingredients. Combine with the cottage cheese mixture and mix.
- Chicken egg: 1 piece

Roll out the dough on a lightly floured surface and cut out a base in any shape (squares, circles, hearts, etc.).

Cut the mango and strawberries (in any shape). Decorate the bases with them.

Grease the baking paper with butter and place it on the baking tray. Transfer the bases to the tray and use a glass to press a border on each one. Be careful not to cut through the dough.

Place about a tablespoon of the obtained cottage cheese mixture on each dough base.

Bake in a preheated oven at 200 degrees for 15-25 minutes.

While the danishes are baking, heat 3 tablespoons of apricot jam, 50 ml of water, and 1 tablespoon of sugar in a saucepan. Wait until the sugar dissolves and the sauce thickens slightly.
- Apricot jam: 3 tablespoons
- Mineral water: 50 ml
- Powdered sugar: 2 tablespoons

Remove the danishes from the oven and let them cool slightly. Brush each danish with apricot sauce using a pastry brush. Allow to cool.
