Semolina cake with kefir and blackberry-banana cream and cocoa is a delicate and airy treat of Russian cuisine that captivates with its velvety taste. The semolina soaked in kefir gives the pastry an amazing softness, while the combination of blackberry and banana creates a sweet, slightly refreshing fruity note. The addition of cocoa deepens the flavor by adding chocolate undertones. This pie is perfect for cozy family tea gatherings and will also be a wonderful treat for guests. It is easy to prepare and does not require complex ingredients, making it accessible for every home baking enthusiast.

1
Pour 1 cup of semolina and 1 cup of sugar with 1 cup of kefir (you can replace kefir with thick sour cream).
- Semolina: 1 glass
- Sugar: 1.5 glass
- Kefir: 1 glass
2
Let this mixture of semolina, sugar, and dairy products steep for about 1 hour. During this time, the semolina will swell, and the sugar will dissolve.
3
Add 2 eggs, 1 cup of flour, a pinch of salt, and 1 teaspoon of baking soda to the mixture. Whisk the dough well with a mixer.
- Chicken egg: 2 pieces
- Wheat flour: 1 glass
- Salt: pinch
- Soda: 1 teaspoon
4
For the blackberry sauce, blend 0.5 cup of sugar, banana, and sour cream.
- Blackberry: 300 g
- Sugar: 1.5 glass
- Bananas: 1 piece
- Sour cream: 1 tablespoon
5
Preheat the oven to 200 degrees.
6
Grease the mold for the semolina cake with butter and sprinkle with semolina — this way the crust turns out better and is deliciously crispy. Pour a third of the batter into the mold, add a layer of sauce on top, then a third of the batter mixed with cocoa, and finally another third of the batter on top without cocoa.
- Semolina: 1 glass
- Cocoa powder: 2 tablespoons
7
Send the mold to the oven at 180 degrees for 40-50 minutes.
