Combine olive oil and half a liter of water in one bowl, and in another, larger bowl, mix flour and salt. Gradually pour the water with oil into the flour, mixing well with a fork to achieve a thick, sticky dough. Let the prepared dough rest for about ten minutes.

In a deep pan, heat vegetable oil to 170 degrees. Transfer the dough to a plastic bag and cut the corner of the bag - so that when pressing the bag, the dough is squeezed out in a thin sausage shape.

Fry the sausages in boiling oil until they are golden brown. Place the fried churros on a paper towel to absorb excess oil, sprinkle with a mixture of sugar and cinnamon, and serve immediately—with or without chocolate sauce.
