Italian Hazelnut Cookies Without Flour

Preheat the oven to 160 degrees. Line 2 baking sheets with parchment paper.

In a food processor, grind the nuts with sugar to a flour-like consistency. Transfer to a large bowl.
- Hazelnut: 340 g
- Sugar: 1.3 glass

In another bowl, beat the egg whites with salt until stiff peaks form. Gently fold into the nut mixture. Then add vanilla.
- Egg white: 4 pieces
- Salt: 0.5 teaspoon
- Vanilla extract: 1 teaspoon

Place the cookies on the trays in small piles, 5 cm apart.

Bake for 25–30 minutes until golden brown. Cool for 5 minutes and carefully transfer to a rack.
