Lemon zest cookies are a delicate and aromatic treat of Russian cuisine that captivates with its refined taste. Lemon zest gives the dough a fresh citrus note, while butter makes it soft and crumbly. These cookies are perfect for a cozy tea time with family or as a treat for guests. The combination of lemon juice and vanilla sugar creates a flavor that is both refreshing and sweet. Such a recipe could have emerged in the homes of Russian housewives who sought to bring a touch of lightness and freshness to traditional baking. They can be served with tea, coffee, or even milk, enjoying the harmony of flavors and tender texture.

We take grated lemon zest (preferably on a fine grater) and mix it with the dough. Then we squeeze the juice of half a lemon and add it there (I think it's not necessary to squeeze the whole lemon, half gives a pronounced flavor, but you can try).
- Lemon: 1 piece
- Lemon: 1 piece
