Shrimp Quiche

Shrimp quiche is an exquisite dish of French cuisine that combines a crispy crust, delicate creamy filling, and aromatic shrimp. The history of quiche traces back to the Lorraine region, where it was originally made with bacon and cheese. In this version, the star is tiger shrimp sautéed with garlic and parsley, giving the pie a rich seafood flavor. The creamy texture of the sour cream and milk sauce complements the salty note of Emmental cheese, creating a harmonious balance of flavors. This quiche is perfect for both a cozy family dinner and a festive gathering. It is served warm and garnished with fresh herbs, making it not only appetizing but also visually appealing.

Heat vegetable oil in a pan. Add the shrimp with their shells on, preferably with heads: this keeps the juiciness and rich flavor. After a minute, add parsley (leave about a third for garnish) and crushed garlic, and sprinkle with a little pepper. Stir and fry for another three to four minutes until the shells are fully covered in pink. Let the shrimp cool.
