Peel the pears and carefully remove the core from the bottom with a small spoon, leaving the stem. Use a sharp knife to cut the lemon zest into strips.

In a saucepan, mix lemon zest, a halved cinnamon stick, both peppers, vinegar, and 1 cup of water.

- Ground allspice: 0.3 teaspoon

Add the pears, cover with parchment, and bring to a boil. Reduce the heat and cook, occasionally turning the pears, for about 20 minutes until soft, but do not let them fall apart. Transfer the pears to a bowl.

Return the saucepan to the heat and bring to a boil. Cook until syrupy for about 15 minutes. Remove the cinnamon. Pour the pears with the syrup. Cool down.
