In a water bath, beat the eggs and yolks with sugar, add vanilla sugar. When the mixture becomes frothy and homogeneous (5-8 minutes), remove from the water bath and let it cool.
- Chicken egg: 3 pieces
- Egg yolk: 2 pieces
- Sugar: 200 g
- Vanilla sugar: 5 g

Whip the cream into a foam and mix it with the egg mixture. Whip well with a mixer.
- Cream: 400 ml

Mix cranberry juice with sparkling wine and briefly dip the cookies to absorb some liquid without getting soggy. Place them at the bottom of the cake mold. Layer half the berries on the cookies and drizzle with cream. Repeat the layers. The last layer should be cream.
- Cranberry juice: 100 ml
- Sparkling sweet wine: 100 ml
- Savoiardi cookies: 200 g
- Fresh berries: 350 g

Place the tiramisu dish in the refrigerator for 6 hours.

Before serving, place the tiramisu on a serving dish. Serve very chilled.

Wash the berries (strawberries, raspberries, red currants, blueberries, etc.), dry them, and remove the stems.
