Apple pie with Calvados is a refined blend of the sweetness of caramelized apples and the depth of noble alcohol. This dessert, despite its French name, finds a place in exotic Thai cuisine where fruits and spices play a key role. The delicate shortcrust pastry infused with cinnamon and cardamom aromas hides juicy apples sautéed in butter and Calvados inside. After baking, the pie develops a golden crust while its filling remains soft and rich. It pairs wonderfully with tea, coffee, or even a scoop of vanilla ice cream. Adding a pinch of cheddar cheese gives an unexpected spiciness to the flavor, revealing new facets of this exquisite dessert.

In a small bowl, mix sugar, cinnamon, and cardamom.
- Sugar: 1 glass
- Ground cinnamon: 0.5 teaspoon
- Ground cardamom: 1 teaspoon

Melt 2 tablespoons of butter in a pan over medium heat. Peel the apples and remove the cores, cutting each into 8 wedges. Add a third of the apples to the pan and sauté, stirring, until soft and caramelized for 8-10 minutes. Remove from heat and carefully pour in 2 tablespoons of Calvados, stir, return to heat, and cook for another 30 seconds. Then stir in 3 tablespoons of cream and cook for another 2-3 minutes until thickened. Transfer to a large bowl. Repeat the same with the remaining apples.
- Butter: 6 tablespoons
- Green apples: 3.5 kg
- Calvados: 6 tablespoons
- Cream 40%: 0.3 glass

On a floured surface, roll out the dough into a circle slightly larger than the round shape. Cut a small circle in the center.
- Wheat flour: to taste

Place the apples in a large round dish and cover with dough. Press the edges.
- Green apples: 3.5 kg
- Shortcrust pastry: 500 g

Preheat the oven to 200 degrees.

Mix the yolk with the remaining cream and brush it on top of the pie. Refrigerate for 30 minutes.
- Egg yolk: 1 piece
- Cream 40%: 0.3 glass

Bake for 50–55 minutes until done. If the dough starts to burn, cover the pan with foil. Let it cool, and optionally sprinkle cheese on top.
- Cheddar cheese: to taste

Then you can make several cuts in the dough and sprinkle with sugar and spices, brushing with the remaining egg mixture beforehand. Send it under the grill to caramelize for a few minutes.
