Peel the apples and core them, then slice thinly. Peel the onions and cut them into thin half-rings. Grate the cheese.
- Apple: 3 pieces
- Yellow onion: 8 heads
- Manchego cheese: 100 g

Heat olive oil and butter in a pan over medium heat. Add onion and apples and sauté until golden for 15 minutes. Cover, reduce to very low heat, and cook for another 30-35 minutes until the apples and onions caramelize. Drizzle with vinegar and salt. Cook for another 5 minutes. Cool down.
- Extra virgin olive oil: 1 tablespoon
- Butter: 1 tablespoon
- Yellow onion: 8 heads
- Apple: 3 pieces
- Apple cider vinegar: 3 tablespoons
- Coarse salt: to taste

On a floured surface, roll out the dough thinly and cut out 6 circles with a diameter of 18 cm (re-rolling the dough scraps if necessary). Place on a baking sheet lined with foil.
- Wheat flour: to taste
- Shortcrust pastry: 500 g

In a blender, puree half of the onion-apple mixture. Spread 3 tablespoons of the puree on each circle, leaving a small edge. Sprinkle with half of the cheese and freshly ground pepper. Then spread the remaining onion-apple mixture and top with the remaining cheese. Carefully fold the edges of the dough inward, pressing slightly. Refrigerate for 30 minutes.

Meanwhile, preheat the oven to 180 degrees.

Bake the tartlets for about 40-45 minutes until golden brown. Serve warm.
