Beat 3 egg yolks with 6 tablespoons of sugar and mix with 500 grams of mascarpone cheese, then slowly fold in the beaten egg whites.

Then lay the cookies in a single layer and sprinkle with warm coffee, so the cookies get a little moist, but not too much.
