Place diced papaya on a baking sheet and freeze overnight.
- Papaya pulp: 8 glasss

In a saucepan, mix sugar and water. Bring to a boil and cook, stirring, for 5 minutes. Remove from heat and let cool. Meanwhile, take the papaya out of the freezer and let it sit for 15 minutes.

Place the papaya in a blender and add syrup, coconut milk, lime juice, zest, and salt. Blend until smooth.
