Potato pancakes are tender and crispy fritters made from grated potatoes, enriched with the aroma of onions and a hint of sweetness from sugar. This simple yet surprisingly delicious recipe originates from Russian cuisine, where potatoes were traditionally a staple on the table. The flavor of the pancakes is harmonious: they combine a golden crust with a soft, delicate center. They can be served with sour cream, garlic sauce, or even fresh herbs. These pancakes are perfect for a family dinner or a cozy breakfast, creating an atmosphere of warmth and comfort. They pair wonderfully with hot tea or kefir, and their appetizing aroma will surely gather everyone around the table.

1
Peel the potatoes and grate them on a fine grater. Add finely chopped or grated onion, egg, sugar, salt, and flour. Mix thoroughly.
- Potato: 4 pieces
- Onion: 1 piece
- Chicken egg: 1 piece
- Salt: to taste
- Sugar: 1 teaspoon
- Wheat flour: 2 tablespoons
2
Pour oil into the pan, preferably more (1 cm layer), so the pancakes are crispy and juicy. You will also need to keep adding oil.
3
Spoon the mixture onto the pan and spread it as thinly as possible. When you see the edges of the white pancakes turning brown, flip to the other side. It's better to fry once on each side.
