In a glass, mix starch and 1 teaspoon of water.
- Cornstarch: 1 teaspoon

In a small saucepan over medium heat, mix pumpkin puree, 0.5 cup of cream, brown sugar, maple syrup, cinnamon, ginger, nutmeg, and salt. Cook, stirring, for about 5 minutes until the sugar dissolves.
- Pumpkin puree: 1 glass
- Cream 40%: 1.5 glass
- Brown sugar: 0.5 glass
- Maple syrup: 0.3 glass
- Ground cinnamon: 2 teaspoons
- Ground ginger: 1 teaspoon
- Ground nutmeg: 0.5 teaspoon
- Salt: 0.3 teaspoon

Pour in the mixture with starch, bring to a boil, reduce to low heat, and cook for another 2 minutes, stirring gently.

Sift the mass into a bowl and cool it.

In a chilled bowl, whip the chilled cream with vanilla using a mixer.
- Cream 40%: 1.5 glass
- Vanilla extract: 2 teaspoons

Add a third of the cream to the pumpkin mixture and gently mix, then add the rest and mix gently again.
- Cream 40%: 1.5 glass

Break the cookie.
- Gingerbread cookies: 12 pieces

Divide half of the pumpkin mixture into molds or glasses, sprinkle with crushed cookies on top, and repeat the layers once more. You can decorate with whipped cream on top.
