Pumpkin yeast bread with honey is a cozy embodiment of autumn warmth and comfort. Its roots trace back to European baking traditions where pumpkin is used to add softness and natural sweetness to the dough. Honey adds a deep, caramel flavor note, while yeast makes the bread airy and aromatic. This bread is perfect for breakfast – its tender texture pairs wonderfully with butter and a cup of hot tea. It also complements cheese platters, soups, or simply cozy family dinners. Each slice is rich in flavor, intertwining light sweetness, tenderness, and a delicious crust. It’s not just bread; it’s a story that warms souls and creates an atmosphere of comfort.

1
Peel the pumpkin from the skin and seeds (you should have 300 grams of peeled pumpkin) and cut it into small cubes. Transfer to a pot and cover with water. Bring to a boil and cook over medium heat until soft. Remove from heat and blend into a puree.
- Pumpkin: 300 g
- Water: 45 ml
2
In a bowl, mix milk, honey, olive oil, salt, and pumpkin puree, then add flour. Make a hole in the center and add yeast. Knead the dough well.
- Milk: 3 tablespoons
- Honey: 2 tablespoons
- Olive oil: 100 ml
- Salt: 0.8 teaspoon
- Wheat flour: 500 g
- Fresh yeast: 15 g

Place the dough on a floured surface and press it into a flat rectangle. Roll it into a log and place it in a greased loaf pan. Cover with a towel and let the dough rise, doubling in size.

Preheat the oven to 200 degrees and bake the bread for about 30-40 minutes until done. Cool down.
