Red onion marmalade is a refined creation of Italian cuisine, featuring a sweet-spicy jam with a caramelized flavor. Slowly cooked red onions with apples, orange zest, and balsamic vinegar develop a rich taste enhanced by aromatic herbs—thyme and marjoram. Peel and chop the onion and apples into small pieces.
- Red onion: 2.5 kg
- Apple: 2 pieces

Add sugar, orange zest to the onions and apples, and pour with apple juice. Add vinegar, thyme, and marjoram.
- Sugar: 1 kg
- Oranges: 1 piece
- Apple juice: 250 ml
- Balsamic vinegar: 25 ml
- Thyme: 1 stem
- Marjoram: 1 stem

Bring to a boil and cook for 15 minutes, constantly skimming the foam.

Remove from heat and let it sit for 30 minutes, then add wine and bring to a boil again.
- Red dry wine: 400 ml
