Add 1 cup of chopped strawberries and cook for 10 minutes until the strawberries soften. Mash the berries with a fork, remove from heat, and add the remaining chopped strawberries. Pour into a bowl, cover, and chill.

Pour milk into a saucepan and add gelatin. Let it sit for 10 minutes. Add the seeds and vanilla pod separately and place on low heat for 10 minutes, stirring gently until the gelatin dissolves. Slightly increase the heat and add the remaining sugar, stirring until dissolved.

Remove from heat, add buttermilk, and remove the vanilla pod. Divide the mixture into 6 small glasses, cover, and chill for 6 hours. Before serving, add 3 tablespoons of jam on top of each and garnish with mint leaves.
