Chinese Honey Peaches

The peaches are first peeled and then steamed with sugar, giving them a rich, caramelized flavor. Wash the peaches, blanch them in boiling water, and then immediately dip them in ice water. After these procedures, the skin will come off easily. Cut the fruits in half and remove the pits.
- Peaches: 6 pieces

Fill a steamer pot halfway with water and place it on the heat. Sprinkle 1 tsp of sugar at the bottom of a large bowl (that can be placed in the pot or suspended by its edges), add peach halves, and top with 3 tbsp of sugar. Steam for 10 minutes.
- Sugar: 5 tablespoon

Carefully remove the bowl and pour the released peach juice into a separate container, using a slotted spoon to place the peaches on a plate.

Pour 3 tablespoons of water into a saucepan and add the remaining sugar. Cook on low heat for 10-15 minutes. Add honey and cinnamon, as well as peach juice, to the resulting syrup. Continue cooking until the syrup becomes thick and sticky.

- Ground cinnamon: 0.3 teaspoon

Pour syrup over peach halves and chill.
