Preheat the oven to 220 degrees.

Mix flour with butter, 70 grams of sugar, and salt. Add 1 yolk and knead the dough. Place it in the refrigerator for 30 minutes.
- Wheat flour: 200 g
- Butter: 120 g
- Sugar: 270 g
- Salt: to taste

Roll out 2 flatbreads on a floured table. Bake the layers until golden brown.

Soak the gelatin in cold water for 15 minutes. Bring the milk with sugar, salt, lemon zest, and yolks to a boil while stirring constantly. Remove from heat. Drain excess water from the gelatin and dissolve it in the milk mixture. Whip the heavy cream. When the gelatin mixture starts to thicken, pour it into the cottage cheese and mix. Add the whipped cream and pitted cherries, and gently mix everything. Place one layer in a springform pan. Spread the cottage cheese mixture on the bottom layer, smooth it out, and place the second layer on top.
- Gelatin: 4 teaspoons
