Quince cookies are an exquisite dessert of Russian cuisine filled with the tenderness and aroma of Eastern gardens. Quince, known for its subtle tart notes, combined with vanilla sugar and lemon zest gives the baked goods a refreshing, balanced taste. This cookie features a light crispy crust and a soft, crumbly texture inside. Historically, quince was a popular ingredient in Russian cooking due to its health benefits and refined aroma. Such a treat is perfect with tea in a cozy home setting, creating an atmosphere of warmth and soulfulness. It is simply baked – the dough is shaped into strands with a slice of fragrant quince hidden inside and then baked to a golden crust. The cookies pair wonderfully with honey or jam, enhancing their fruity notes.
