Preheat the oven to 180 degrees. Grease the roll pan with butter and line it with greaseproof paper.

Break the chocolate into small pieces and place it in a water bath. Add brandy and keep on low heat until the chocolate melts.
- Dark chocolate: 175 g
- Brandy: 6 tablespoons

Combine powdered sugar and egg yolks and beat until thick. Then add chocolate and beat again.
- Powdered sugar: 225 g

Whip the egg whites. Add one spoon to the chocolate mixture and mix. Pour into a baking dish and smooth the surface. Bake in the oven for 20-25 minutes.

Take the chocolate cake out of the oven, cover it with a towel, and leave it overnight.

Before serving, whip the cream and add brandy. Spread the cream on the cake layer. Top with cherries, removing the pits beforehand. Roll it into a log. Place it on a plate.
