Preheat the oven to 135 degrees.

In a large bowl, beat the egg whites with a mixer until stiff peaks form. Add the grated lemon zest, then gently fold in the sugar and almonds.
- Lemon: 1 piece
- Egg white: 3 pieces
- Sugar: 1 glass
- Ground almonds: 1.5 glass

Line the baking tray with foil and brush with a little vegetable oil. Place the dough by 1 teaspoon for each portion, leaving 3-4 cm between the macarons.

Bake for 20–30 minutes until they are firm and golden. Cool for 5–10 minutes, then remove from the foil.
