Separate the egg whites from the yolks, combine with powdered sugar, and beat with a mixer until stiff peaks form. Gently fold the beaten egg whites with almond flour and essence.
- Egg white: 4 pieces
- Powdered sugar: 200 g
- Almond flour: 250 g
- Amaretto liqueur: 1 teaspoon

Using a piping bag or spoon, place the mixture on a baking sheet in 4-5 cm diameter portions. Leave 2-3 cm between cookies to prevent them from merging.
