Caramelized Grapefruit Peel Strips

Using a citrus knife, cut the zest from the grapefruit into long strips. Slice each strip into thin matchsticks.

Place the strips in a pot and cover with water. Bring to a boil and cook for 10 minutes. Drain the water through a sieve.

In a small pot, mix 0.6 cups of water, sugar, and syrup. Bring to a boil, stirring until the sugar dissolves. Add grapefruit strips and simmer until the peel becomes transparent and the syrup thickens, about 15-20 minutes. Cool the peel in the syrup. Cover and refrigerate.
