In a small bowl, mix starch with a little water until it forms a paste. Add to the rhubarb and cook for another 5 minutes until the mixture thickens slightly. Pour the mixture into a glass serving bowl and cool.

Before serving, whip the cream with the remaining sugar and vanilla into a stiff foam. Transfer to a piping bag and decorate the top of the pudding.

Cut the rhubarb into small pieces and place it in a pot. Add water and 0.5 cup of sugar. Cook over medium heat until soft. Add 0.5 teaspoon of vanilla.
