In a small pan, melt the butter and add the almonds. Fry until golden brown and transfer to a paper towel.

- Almond flakes: 60 g

In a small pot, bring the milk to a boil over medium heat. Remove from heat.

In a metal bowl, beat the yolks, sugar, and salt until creamy. Gradually add hot milk while whisking. Place the bowl over a water bath and whisk for another 8-10 minutes until the mixture thickens. Remove from heat and add cream, pureed figs, vanilla, and almonds.
