In a large bowl, mix the plums cut into 6 pieces and raspberries. In a pot, combine wine, water, and 1.25 cups of sugar. Extract the seeds from the vanilla pod and add only the pod. Place over medium heat and stir until the sugar dissolves. Increase the heat and boil for about 20 minutes until the volume reduces to 2.6 cups. Pour the hot mixture over the plums and raspberries. Cool, cover, and refrigerate overnight.
