In a pot, mix chocolate sauce, chocolate chips, and water. Place on low heat until the chocolate melts and the mixture is smooth. Remove from heat and add brandy. Cool down.

Line a deep round bowl with a diameter of 25 cm with film. Spread cherry ice cream on the bottom and edges, leaving 2 cm of clean edge at the top. Create a 15 cm deep indentation in the center. Place in the freezer for 30 minutes. Fill the indentation with chocolate ice cream and smooth it out. Layer wafers on top and press lightly. Pour about 1 cup of chocolate sauce over the wafers and add another layer of remaining wafers. Cover everything with film and place in the freezer overnight.
