Put almond paste, salt, and 0.25 cup of sugar in the food processor. Mix well.

Preheat the oven to 180 degrees. Line a rectangular dish with foil and grease it with oil.

Using a mixer, beat the softened butter with the remaining sugar until creamy. Add almond paste, egg yolk, and almond extract. Mix well again. Reduce the mixer speed and add the flour. Place the dough in the mold.

Lightly beat the egg white and brush the dough. Sprinkle almond flakes on top.

Bake until done and golden brown for 35-40 minutes. Cool in the pan for 1 hour and transfer to a board. Cut into squares or rectangles.
