Mix the flour, leaving 2 tablespoons, 1 tablespoon of sugar, and 0.75 teaspoon of salt in a food processor. Add 10 tablespoons of diced butter. Mix well. Add 4 tablespoons of orange juice, knead well, adding more juice if necessary. Roll the dough into a ball and flatten it into a disk, wrap in plastic, and refrigerate for 1 hour.

Roll out the dough on a floured surface and transfer it to a round pan, pressing it down slightly. Freeze for 10 minutes.

Preheat the oven to 180 degrees. Melt the remaining butter with sugar in a fireproof dish over medium heat and bring to a boil. Let it boil for 1 minute while stirring. Remove from heat. Peel the apples and cut them into quarters. Place in the dish, rounded side down. Bake for 15 minutes, flip, and bake for another 20 minutes until soft. Transfer the apples to a paper towel and let cool slightly. Heat the syrup in a small saucepan and let cool slightly.

Mix the remaining sugar, flour, and salt. In another bowl, place the eggs and gently mix in the apple syrup. Add corn syrup, vanilla, and the sugar mixture. Mix well and add the chopped nuts. Spread the filling over the dough, place the apples on top, rounded side up, and press down slightly.
