Low-carb diet cheesecake is a delicate dessert that combines the airy texture of cottage cheese, the richness of poppy seeds, and the freshness of berries. Its roots trace back to American cuisine, where cheesecakes have long won the hearts of gourmets. However, this version offers lightness and healthiness without excess sugar and carbs. The gelatin and low-fat cottage cheese base gives it density and a creamy structure, while vanilla and cinnamon enrich the aroma. Berries add refreshing fruity notes, and a splash of lime juice adds a subtle tanginess. It's perfect for those watching their diet but not wanting to miss out on pleasure. Easy to prepare, it sets quickly in the fridge into an elegant treat. This cheesecake is suitable for breakfast, a light snack, or festive gatherings.

If the berries are frozen, lay them out on a plate in a single layer. They won't thaw at all in 40 minutes, but that's even better.

Carefully pour the cottage cheese mixture into the mold and gently place the berries in it, distributing them evenly. Drizzle lime juice on top.
