Pour water and sake into a pot, add star anise, cinnamon, juice and zest of 1 lime, and bring to a boil. Simmer for 5 minutes, then reduce the heat. Add peeled whole pears, cover, and stew for 45 minutes until tender. Remove from heat and let cool in the syrup.
- Water: 600 ml
- Sake: 8 tablespoons
- Anise (star anise): 2 pieces
- Cinnamon sticks: 1 piece
- Lime: 2 pieces
- Chinese Pears: 2 pieces

For the sauce, melt the chocolate and mix it with cream and butter. Add the zest of the second lime and mix well.

- Cream: 150 ml
- Butter: 50 g
- Lime: 2 pieces

Before serving, cut the pears in half and remove the inner part. Place in 2 serving bowls and drizzle with chocolate syrup.
