Turkish cheese rolls are a fragrant and delicate treat from Turkish cuisine, where airy dough is combined with rich cheese flavor. This recipe uses kefir and margarine, making the dough especially soft and pleasant. The filling of grated cheese whipped with egg white and baking powder gives the rolls lightness and zest. Before baking, they are brushed with egg yolk and sprinkled with sesame seeds, adding a golden hue and crispy crust. These rolls are perfect for breakfast or a cozy tea time, their aroma and taste reminiscent of cozy Turkish cafes where fresh pastries are an integral part of the culture.
