Preheat the oven to 180 degrees.

Roll out the dough to a thickness of 2-3 mm and cut out 24 circles.
- Shortcrust pastry: 400 g

Place dough circles in muffin molds and bake for 10-12 minutes. Cool down.

For the filling, mix lemon juice, grated zest, yolks, and sugar. Pour into a pan and heat on low until the sugar dissolves.
- Lemon juice: 150 ml
- Lemon zest: 10 g
- Egg yolk: 6 pieces
- Sugar: 125 g

Add butter and stir constantly until the mixture thickens. Remove from heat and cool.
- Butter: 100 g

Whip the cream well and fold it into the cream.
- Cream: 250 ml

Fill the sand molds with cream using a spoon and decorate with fresh berries. Lightly sprinkle with powdered sugar.
