Sift flour and salt into a bowl, add crushed rice and sugar. Grate unsalted butter and add it to the flour. Mix until a homogeneous mass is obtained (it's best to take small portions of flour and butter in your palms and rub them in circular motions).

- Salt: pinch
- Rice: 40 g
- Sugar: 75 g
- Butter: 175 g

Place the mixture in a square baking dish (20x20 cm). Smooth the top. Refrigerate for an hour.

Preheat the oven to 140 degrees.

Bake the cookies for 40 minutes until golden brown. Remove from the oven, poke with a fork, then cut into 20 pieces (down to the bottom). Generously sprinkle with superfine sugar and let cool. Then remove from the mold.
