Cottage cheese kulich without yeast is a delicate and aromatic Easter treat inspired by Russian culinary traditions. Unlike the classic yeast kulich, this version is made with cottage cheese, which gives the pastry softness and rich flavor. The addition of dried apricots and walnuts makes the texture interesting and adds sweet and nutty notes. Vanilla paste and butter complete the rich bouquet of flavors. Prepare all the ingredients.

Pass the cottage cheese through a sieve or blend it to ensure there are no lumps.
- Cottage cheese: 450 g

Lightly beat 4 eggs and 2 yolks until smooth.
- Chicken egg: 6 pieces

Add mashed cottage cheese, sugar, salt, and vanilla paste to the eggs.
- Cottage cheese: 450 g
- Sugar: 400 g

Pour in the melted butter and mix.
- Butter: 150 g

Sift the flour with the baking powder and gradually mix it into the dough.
- Wheat flour: 450 g
- Baking powder: 12 g

Chop the dried apricots and nuts into small pieces and mix them into the dough.
- Dried apricots: 200 g
- Walnuts: 100 g

Place the dough in the cake molds (if they are reusable, grease them with vegetable oil), filling them two-thirds full.
- Vegetable oil: 10 ml

Bake the kulich in an oven preheated to 180 degrees for 60 minutes. Check readiness with a skewer; it should come out dry when inserted in the middle. Let the finished kulich cool completely on a rack.

For the glaze, beat the remaining egg whites with powdered sugar, adding citric acid at the end.
- Powdered sugar: 200 g
- Citric acid: 2 g

Dip the kulich in the glaze and, if desired, decorate with confectionery sprinkles.
