Heat the milk and 40% cream almost to boiling. Place finely chopped chocolate in a bowl and pour hot milk mixture over it. Stir until smooth, then let it cool.
- Milk: 125 ml
- Cream 40%: 65 ml
- Dark chocolate: 125 g

Whisk the yolks with sugar until thick, then add 25% cream and whisk for another 5 minutes. Add the chocolate mixture and mix. Serve with ice cream and raspberries.
