Pear Pie

Mix 125 grams of butter (cut into cubes), 30 grams of yolks, baking powder, salt, wheat flour, and 100 grams of sugar in a mixer bowl.
- Butter: 225 g
- Egg yolk: 60 g
- Baking powder: 2 g
- Salt: 1 g
- Wheat flour: 200 g
- Sugar: 200 g

Mix at medium speed until the dough comes together and becomes smooth.

Knead the dough by hand until it becomes smooth.

Roll out the dough between two layers of parchment.

Place the dough in the mold, trim the edges, and prick the base with a fork.

Bake in an oven preheated to 180 degrees for 8 minutes.

Take out the dough and spread condensed milk on it.
- Condensed milk: 100 g

In a mixer bowl, combine almond flour, 100 grams of softened butter, 30 grams of egg yolks, and 100 grams of sugar. Mix at medium speed until the mixture becomes creamy.
- Almond flour: 100 g
- Butter: 225 g
- Egg yolk: 60 g
- Sugar: 200 g

Spread cream on condensed milk.

Peel the pear, cut it in half lengthwise, then slice each half crosswise into many pieces (but do not separate the fruit into pieces).

Place the pear on almond cream.
