Easter cake with orange zest and raisins

Pour warm milk into a deep bowl and dissolve fresh yeast in it. Add 1 tablespoon of sugar and 1 tablespoon of flour.
- Milk: 100 ml
- Fresh yeast: 20 g
- Sugar: 100 g
- Wheat flour: 350 g

Mix all the ingredients and set aside in a warm place for 10-15 minutes.

Add 2 eggs and half a cup of flour and mix with a whisk until smooth.
- Chicken egg: 2 pieces
- Wheat flour: 350 g

In another bowl, mix the dough for the kulich. Melt the butter in the microwave on low power, combine it with sugar and vanilla sugar. Leave 1 teaspoon of butter for greasing the paper molds.
- Butter: 120 g
- Sugar: 100 g
- Vanilla sugar: 1 teaspoon

Next, separate the egg whites from the yolks and add the yolks to the bowl with butter and sugar. Mix well.
- Egg yolk: 2 pieces

Pour the mixture into the bowl with the dough and mix everything together.
- Wheat flour: 350 g

Sift the second cup of flour into a large bowl and add it to the other ingredients. Knead the dough.
- Wheat flour: 350 g

Leave the bowl with the dough in a warm place for about an hour.

When the dough for the kulich rises three times, add raisins and orange zest, knead and mix again.
- Raisin: 120 g
- Orange zest: 1 piece

Grease each mold with butter and fill the batter about one third full. Wait for the batter to rise a second time.

Bake the kulich in a preheated oven at 180 degrees for 40–45 minutes.

Whip the egg whites, powdered sugar, and lemon juice in a separate bowl.
- Egg white: 1 piece
- Powdered sugar: 200 g
- Lemon juice: 0.5 teaspoon

Apply icing to the cooled kulich.

Optionally decorate with sprinkles, nuts, or chocolate crumbs.
