Chop the vanilla pod and sugar in a processor. Set aside (if using vanilla essence, add it to the whipped cream).
- Vanilla: 1 piece
- Sugar: 150 g

Prepare the custard: place a three-liter pot on the heat and bring the low-fat cream to a boil. In a small bowl, whisk the egg yolks, salt, and sugar mixture. Gradually pour the hot cream into the yolk mixture. Pour this mixture into the pot and cook over medium heat, stirring constantly. (Do not let the mixture boil, or it will curdle.) Remove from heat.
- Cream 10%: 675 ml
- Egg yolk: 4 pieces
- Salt: pinch
- Sugar: 150 g

Sift the cream into a clean large bowl. Add whipped cream with vanilla. Mix well. Refrigerate for 2 hours, or better yet, overnight.
- Cream 40%: 225 ml

Whip and freeze in an ice cream maker.
