Flatbreads are a simple yet delightful product that has nourished people for centuries worldwide. Their roots trace back to ancient civilizations where bread was a staple of the diet. Today, these thin, aromatic flatbreads can be found in various cuisines. The delicate dough made with yeast and honey acquires a light sweetness, while added spices provide depth of flavor. Baked on a hot skillet, they become airy with a crispy crust and soft center. Flatbreads are perfect for serving with sauces, wrapping fillings, or simply as a standalone treat. Their versatility makes them indispensable in any home, and the preparation process turns them into a special gastronomic pleasure.

1
Thoroughly mix fresh yeast with honey, add hot water (not boiling!) and stir. Sprinkle 1 tablespoon of flour and let it sit for 15 minutes until it froths.
- Fresh yeast: 50 g
- Honey: 2 tablespoons
- Wheat flour: 500 g
2
Mix salt with flour, then add yeast and olive oil. Knead everything in a bowl, then place it on the table and knead with your wrist for 5-8 minutes until the dough becomes smooth and elastic.
- Salt: 1 tablespoon
- Wheat flour: 500 g
- Fresh yeast: 50 g
- Olive oil: 4 tablespoons
3
Return the dough to an oiled bowl, cover with a towel, and place in a warm spot to rise. When the dough doubles in size, which will take about 1 hour, take it out of the bowl and knead again. Sprinkle the dough with chosen spices and gather the ends of the dough to the center like an envelope. Knead the dough with herbs and spices for 3-4 minutes to evenly distribute them throughout the dough.
- Wheat flour: 500 g

Divide into pieces the size of a mandarin, sprinkle with flour, and roll each piece to make very thin flatbreads (the thickness of a coin) 15 cm long.
- Wheat flour: 500 g

Place the dough in a very well-heated heavy skillet and bake for 1-2 minutes without touching until you see bubbles on the surface. Then flip and bake for another 1-2 minutes.
